Hello there,
I am not a member of the Martin only fan club. My favorite acoustic guitars are made by Gibson. I have owned some Epiphones and played several others. I have liked everyone that I played.I think Epiphone has some of the best beginner/ mid level acoustics. I greatly prefer them over the comparable Fender products. I carried one Epiphone acoustic with me for about 11 years. I never had any problems with that guitar. Played and sounded as great the day it was stolen as it did when I bought it.
Other brands (in addition to the Gibson and Fender products) that you may want to consider would include Ovation and Takemine. Both have decent starter guitars. Personally, I could never warm to the plastic bowl back of an Ovation. But several friends loved there. The played fine. Just a personal thing, I guess. I also loved the old Guild acoustics. Those are for collectors now.
If you have not already done so, you should take a look at the user reviews at Harmony Central.

As for the tuning problem. That can happen with any guitar. The environment in which the guitar is kept can effect its ability to hold tune. When I read the part about the guy whose guitar kept going out of tune, the first thing that popped into my mind was that guy does not know how to store his guitar.
I think you will enjoy your Epiphone if you chose to buy one.
Later.
